Zucchini & Chia Seed Banana Bread

You may find that even the pickiest eater will love this recipe. It offers just enough sweetness. The texture is light and moist and we can say, from experience, that it’s almost impossible to eat just one piece!

Recipe from Farmhouse Manna

Serves 6 to 8

Ingredients:

1/2 cup honey

1/2 cup safflower oil

2 teaspoons vanilla extract

1 large, ripe banana, mashed

2 1/2 cups zucchini, unpeeled and grated

2 1/2 cups unbleached flour

1/2 cup almond flour

2 tablespoons chia seeds

1 teaspoon baking soda

2 teaspoons baking powder

3 teaspoons cinnamon

Directions:

Preheat oven to 350 degrees F.

In a large bowl, combine honey, safflower oil, vanilla, mashed banana, and zucchini and mix well. In a separate bowl, sift the flour, add additional dry ingredients and chia seeds and combine. In a separate bowl, sift the flours and add additional dry ingredients and combine. Add cupful at a time to the wet ingredients. Stir until well blended, but do not over mix.

Pour the batter into a 9” x 9” pan lined with unbleached parchment paper and bake for approximately 45 minutes until a toothpick inserted into the center of the loaf comes out clean.
