A simple recipe to make with your child. This recipe is also perfect for meal prep.
Makes approximately 8 cups
INGREDIENTS
3 cups rolled oats
2/3 cups oat flour
1/4 cups coconut oil
1 cup currants
1 cup shredded coconut (unsweetened)
1 cup chopped walnuts, raw
1 cup chopped pecans, raw
1/3 cup flax seeds, ground
1 cup sunflower seeds, raw
1 cup maple syrup
4 teaspoons pure vanilla
3 teaspoons cinnamon
1 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F.
In a large bowl, mix all ingredients together.
Press the mixture down on a cookie sheet that has
been lined with unbleached parchment paper.
Bake for 15 minutes.
Remove from the oven and while tossing, turn the
granola over, press down again, and bake for
another 15 minutes until golden brown.
Let the granola cool completely before storing in
a glass jar for easy access. Use the granola to
garnish your family’s favorite yogurt or enjoy
snacking on it alone.
